Homemade Thin Mint Ice Cream

I consider myself fairly progressive and that’s why on Sunday I had my trusty circa 1999 boombox with the crooked antenna tuned into NPR’s Weekend Edition.

I was ready to get caught up on the news while I ironed some laundry (yes, my life is that glamorous) when I heard the show’s host ask her guest if Girl Scout cookies are oversaturated in the market.

Was there not any real news this weekend?

The show went on to talk about what you can do if you are just so tired of eating your regular ol’ Girl Scout cookies straight from the box.

I’m all for mixing things up and we’re going to do that in just a minute. I have to say this one thing first.

If you’ve eaten so many Girl Scout cookies that this is your problem, then you know this isn’t your actual problem, right?

Don’t hate the messenger.

I don’t think Girl Scout Cookies are the greatest cookies ever. However, I will buy a couple of boxes per year if a neighbor kid comes to my door selling them. I like to encourage that kind of entrepreneurial initiative. Plus, I’m a sucker.

Regardless of whether or not you’re tired of eating Girl Scout cookies the regular way, I encourage you to mix them into vanilla ice cream! I wrote last year about how to make your own homemade Thin Mint Ice Cream. If you don’t have an ice cream maker, just use your blender or crumble a cookie on top of a scoop of vanilla ice cream. It’s happiness on a spoon! I have a box of Samoas that are just waiting to be transformed into ice cream. *drool* Maybe I should put that on this weekend’s agenda.
