Summer Must Try: Lemon Curd S’mores

Summer is for play, but I’m not goofing around when I say you must make lemon curd s’mores this summer. They taste just like lemon meringue pie, but aren’t nearly as hard to make.

Lemon Curd S’mores Ingredients:

lemon curd
Ritz Original crackers (or an equivalent buttery cracker)
Marshmallows
Kosher Salt

How To Make Lemon Curd S’mores:

Ready your Ritz Original crackers by smearing some lemon curd on one side of two crackers. (I say two crackers, but we all know you’re going to eat more than one s’more, so you might as well prep a bunch! Just trust me and set up your s’mores assembly line.)

This is optional, but sprinkle a teeny bit of kosher salt over the top of the lemon curd.

Roast your marshmallows over the flame of your choice. (I like to use these telescoping marshmallow roasting sticks because they are happy-looking, store small, and clean up is easy.)

When the marshmallow is toasted to your preferred level of toastiness, but try not to burn it this one time, sandwich it between your two lemon curd-smeared Ritz crackers.

Enjoy this bite-sized taste of lemon meringue-y perfection.

Where to Find Lemon Curd:

I know someone is going to say, “You find lemon curd at the grocery store, DUH!”

This is correct! Bless you.

I just don’t want you or your Instacart shopper to panic if you check the jam and jelly section of your grocery store and the lemon curd isn’t right there next to the grape jelly and peanut butter. This is not the time to panic.

Some grocery stores will stock lemon curd in the baking aisle with the canned pie fillings. In fact, I’d check the baking aisle first.

Other Summer Treats You Can Make With Lemon Curd:

I could probably keep riffing on dessert ideas, but then you’d need to buy another jar of lemon curd.

Every Sweet S’mores Needs a Savory Counterpoint.

I can definitely party with the “life is short, eat dessert first” crowd. Those folks know how to have a good time!

I also like a little balance in my life. That’s where the savory s’mores come in. I’ve shared these before, and they are worth sharing a million more times. You can read all about them here.

In short, a savory s’more is melted cheese paired with crackers or bread and toppings of your choice, such as salami, pesto, balsamic glaze, hot honey, bacon, olives, onion jam, etc.

Instead of putting a marshmallow on the end of your roasting stick and holding it over the fire, you’re using a chunk of cheese.

You want to select cheeses that melt well for savory s’mores. Think mozzarella, fontina, brie, etc., but have fun experimenting with different cheeses. Part of the fun of savory s’mores is seeing which ingredient combinations you enjoy the best.

The first time we made these, I also had some side dishes, but we didn’t need them. Everyone was happy to fill up on the savory s’mores. It was a super fun way to make and eat dinner, especially if you’re having friends over.
